Dutch oven cooking demonstration on how to make a delicious Dutch oven Salmon

This week’s Scoutmaster Dave is a little different; we are going to be doing some Dutch oven cooking.
One of my favorite Dutch oven meals is a Salmon and I’m going to take you through making it in my 10 inch Dutch Oven.
The Salmon is prepared in three stages; this is based on the cooking time of the various parts.
The first step after we get our charcoal going is to prepare the potatoes by cutting them up into chunks about 1 inch thick, and coating them with olive oil, parsley, salt, pepper and 2 cloves of minced garlic.
When the Dutch oven is nice and hot we are going to dry roast the potatoes. We do this by putting about 25 coals below the potatoes.
Let those cook for a while, using the dry-roasting technique, until they got good and seared on all sides, and the seasonings were clinging to potatoes, about 30 minutes.
While this is working you can prepare the asparagus by coating it with oil, lemon, salt and pepper.
We then put these into the oven for about 5-10 minutes, aligning them like a grill to hold the salmon in the next phase.
So the potatoes have cooked not for about 35-40 minutes and the asparagus for about 5-10. Now we’re going to change the coals so we have about 10 below, and 15-20 above as we put in the salmon.
A 2 pound salmon filet will serve about 4 people.
In the dry-roasting phase: 25 + coals each above and below. In the final baking phase: 10-12 coals below, 18-20 coals above.
On top of the salmon, sprinkle dill, and chopped green onions, and put a lemon slices on the salmon. From here you are going to cook it for another 15-20 minutes.
In the end you have potatoes that have cooked for about an hour, asparagus that has cooked for about 30 minutes and the fish, which cooks the quickest, for about 15-20 minutes.
Add asparagus to potatoes and stirred them together. Lay salmon fillet pieces in on top. Replace lid and readjust coals as above, and began baking the salmon and asparagus with the potatoes. Cook for about 15-20 minutes or so.
While not the most economical meal it it one of the more healthy ones you find me making, as most of the meals I cook outdoors tend to be calorie rich. This works out to be about $34 worth of groceries, which works out to about $9 per person, this varies bases on how much you pay for your salmon. My estimate is about $20 for the fish. Yours locally may differ.
